Getting in your Fresh Fruits

I dont know about some of you, but I often have a difficult time fitting in at least four fresh fruits daily.  I am one who enjoys sleeping in as much as possible, so I allow myself the 20 minutes I need to get dressed and primped before running out of the door in the morning.  I generally dont have time for much else, so it is a challenge for me to eat a healthful, fruit-filled breakfast unless it is ready for me to grab and go.

I have had a pineapple sitting on my shelf for the last few weeks waiting for it to feel ripe enough to eat, I also purchased a bunch of fruit at the grocery store last night, including cantaloupe, navel oranges, grapefruit, and blackberries.  Another recent purchase of mine was a set of two gigantic Tupperware storage bowls  that holds a lot of food... A LOT.  I decided my fresh fruit and gigantic Tupperware was just what I needed to get myself consistently eating a variety of fresh fruit in the morning.

Fresh Fruit for the Week:
Here is my breakfast this morning, already half eaten :)

  • 1 pineapple
  • 1 cantaloupe
  • 1 grapefruit
  • 2 navel oranges
  • 3 bananas
  • 4 small apples
  • 1 box blackberries
  • 1 lemon, juiced
Instructions:
  1. Peel, cut, core, etc. all fruit and place into a large bowl.
  2. Pour the juiced lemon over the fruit and toss to coat.
  3. Store in an airtight container and eat over the week.
Amys Notes:
Now, lets break down the servings of all of these fruits.  
  • 1 pineappe ~ 4 servings
  • 1 cantaloupe ~ 6 servings
  • 1 grapefruit ~ 2 servings
  • 2 navel oranges ~2 servings
  • 3 bananas ~3 servings
  • 4 small apples ~2 servings
  • 1 box blackberries ~ 1 serving
Total servings in my fruit bowl: 20
Im guessing that it will take me about 4 days to go through the whole bowl, so that equates out to be 5 servings of fruit fruit per day... SCORE!  Prepping the whole bowl took me about 30 minutes from start to cleanup, so that takes away time that I would have spent trying to cut fruit in the mornings.

On another subject, one of my best girlfriends is getting married this summer and I am one of her bridesmaids.  She was nice enough to let us pick out different dresses as long as they were all the same color.  This is the dress I ordered earlier this week for the wedding:
Her color is a gorgeous deep plum purple, and her accent color is silver.  Now all I have to do is to be on the lookout for some sparkly, but comfortable silver heels.  Im so excited for the summer to come!

In the meantime, Kevin and I will be hitting the gym like crazy, preparing for our cruise in May to the Caribbean.  We had a bit of a gym slump this week because it snowed and/or was icy on the roads, especially in the evening, so we opted to stay in a few nights.  Im hoping to get back to work tonight and try out a Zumba Party class with the bride-to-be mentioned above.  It should be a fun time.  To encourage us, I sent this picture to Kevin:

TUNA FRESH TOMATO PASTA WITH LEMON THYME

I was at a real loss at what to cook tonight - Arabella poo-pooed all my suggestions and so I decided to wing it and just went to the supermarket in hope of finding a good recipe card. Thankfully I was in luck!! Arabella will never say no to pasta and this didnt seem to heavy which was a relief as I was still slightly stuffed from my afternoon treat of millionaire shortbread.

It took just around 15 minutes to prepare and cook.

Ingredients for 2 people:

150g dried pasta - the recipe suggests linguine however I used some leftover macaroni
1 tsp olive oil
1 clove garlic, crushed
200g cherry tomatoes, halved
2 x 80g can John West Infusions Tuna Lemon & Thyme
6 basil leaves, roughly torn
2 tbsp grated Parmesan cheese (plus extra to serve if required)

Optional extra - 1 tablespoon of capers or 6 green olives, halved



Cook the pasta in salted boiling water according to the packet instructions - mine took 7 minutes.



While this is cooking, heat the oil in a small frying pan and cook the crushed garlic and halved tomatoes for 2-3 minutes until softened but still holding their shape.




Drain the pasta and return to the pan.



Add the tomatoes, garlic, tuna, basil and Parmesan to the pasta.






Season generously and toss together.



Serve with a little extra Parmesan if desired (we added quite a bit extra obviously)!



This was good - I liked the flavoured tuna however I felt the recipe was lacking a little something salty so I added a tablespoon of capers to mine and some green olives to Arabellas - this completed the recipe and took it to very good! It was very quick and easy to make and we used a lot of store cupboard ingredients which I always like. Actually the most complicated part of this recipe was opening the tuna lids!!

ROAST BEEF FRESH TOMATO PASTA

Winter is here and it is definitely the time for Sunday roasts. I loved the sound of this recipe as it also included pasta. It is inspired by a dish called "macaronde" which was bought to France by the emigrants from Italy. I have a phobia against proper roasts due to bad childhood memories so this alternative is right up my street! It took just over an hour but this depends entirely on how you like your beef done - we like ours medium rare.

Ingredients for 4 people:

2 tbsp olive oil
900g British rump, sirloin or topside beef joint
350g rigatoni or similar shaped pasta
3 garlic cloves, crushed
450g vine-ripened baby plum tomatoes, halved
Large handful fresh basil leaves, torn - we used about 30g
100ml good quality robust red wine (I just used what we had…..which wasnt very good quality)!
100g hard cheese such as Parmesan (we also added some grated cheese as we are cheese addicts)
Sea salt flakes



Preheat the oven to 200 C / 180 C (fan) / gas mark 6.

Rub a tablespoon of olive oil over the beef and season. 



Roast for 20 minutes and then turn the oven down to 170 C / 150 C (fan) / gas mark 3.5 and roast for a further 40 minutes or so according to the size of your joint and how you like it cooked. It will explain on the packet instructions. The best way to check the beef is to use a digital thermometer - it should read 55 C for rare and 65 C for well done…I didnt actually have one though!

While this is cooking prepare the ingredients for the pasta. 



About 10 minutes before the beef is done, start on the pasta. Cook according to the packet instructions until al dente.



Meanwhile, heat one tablespoon of oil in a pan over a high heat and add the garlic. Once it starts sizzling, add the tomatoes. I actually added them at the same time as I didnt read the recipe properly but I dont think made a difference.



Once most of the juices have evaporated, remove from the heat and toss in the basil.

By now the beef should be ready. Transfer the beef onto a plate and cover loosely with foil.




Add the wine to the juices in the roasting tin and bubble over a high heat for a couple of minutes, stirring and scraping the bottom of the tin.


Drain the pasta, saving a little bit of cooking water.

In a bowl or dish mix together the juices from the roasting tin, the pasta, the tomato, garlic and basil mix, the cheese and a splash of pasta water. Put it back in the oven for 5 minutes.




Finally sprinkle the beef with sea salt and thinly slice. Serve with the pasta and garnish with a couple of extra basil leaves and shavings of Parmesan.



This was very good - I loved the combination of the tomato and basil pasta with the beef. It was kind of like a very smart posh spag bol! Plus it something different as well. Arabella loved the pasta but wasnt as keen on the beef but I think that is just because she is not that used to it, we rarely have steak or anything at home. She did eat it all though as did I. I think it would be a good idea for a dinner party too - a real winner - and actually great for summer and winter!
