Diet to be or not to be

I have continued doing the Mat workout. I think I am doing it better by now, my arms are not killing me the very first 20 seconds anymore, and I can make it through only with 10-12 short 1-2 seconds resting breaks. I like it a lot, it makes me feel alive and living every day. After doing it and taking shower even life seems much better and sunnier. :)

The next question so far is diet: to go for it or not?

I found somewhere that of course Tracy recommends to do the diet for at least the first 30 days - even if one is not interested in significant weight loss.

On the one hand, I am not so interested in the weight loss (or rather I dont really care), but I want to see if the training really works better with the diet...

On the other hand, if I do want to loose some weight, I should really do it proper, as for me it would be difficult to loose much weight: I am already in the "normal wight" category, so loosing those 5-7 kilos, will be extremely hard.

It might add some more stress on me, but hey health starts in the kitchen and if Tracy can get me into a habit of eating more healthy, I can do it!

So, in the end, I decided to try the diet. At least the first 30 days - so I can try several of the Nutrient Boost and Body Reset weeks. Then I will see if it makes too much hustle, or if I simply dont like it, or it is a bit too expensive for me, etc. And again, if I want to truly do it right and get results, I should do it proper.

I will later try to organise all the groceries (TAM webside provides a good groceries list for shopping, but I will need to convert the measures for our European realities), and will post my shopping lists for each week - as long as I am on diet of course. Good that some recipes repeat themselves, so it would be easy to get used to preparing them.

What I need for now - and is on my shopping list to buy:

  • Food processor
  • Steamer
  • Juicer
As I cant afford all this at the same time, I decided to first get an OK-ish food processor - it is essential, the rest is possible with easy appliances (using a little basket to use with pots instead of an electric steamer, and the good old cloth for manual juicing...)

Move to Puyallup WA

Like I mentioned in my "Confessions" post yesterday, Kevin and I moved to Puyallup, WA a little over a month ago.  We had been living in Spokane Valley, WA where I grew up.  This last spring, my husband finished his Masters in Secondary Education and had been looking for a permanent teaching position to start his career.  Little did we know, finding a teaching position as a new graduate without experience was not an easy feat.

July came and he had a few interviews here and there in the "middle-of-nowhere" central Washington, but nothing seemed promising.  Then, Kevin landed an interview with a new type of alternative high school that was opening on the west side of the state.  He was offered a job to start training the very next week!  We were ecstatic that he found something he was familiar with through his student teaching experiences, and for the same pay he would expect as a teacher in a traditional high school.

But what the heck was I going to do in Puyallup?!  As luck would have it, my company has several offices in the region, and the office closest to Puyallup in Tacoma (Fife) was looking for an Office Administrator.  This was a position I could easily move in to from being a Project Coordinator, but would involve less project work and more office responsibilities.  I talked to my supervisor and it was made official... I would be transferring to be able to start at the end of July!

The very next day after Kevin accepted the offer (Thursday), we made the drive across the state to Puyallup to start looking for an apartment that would be between our work locations and in a nice enough area.  On Friday, after a full LONG day of apartment hunting, we settled on a nice place between Puyallup, Summit/Waller, and Frederickson.  We drove back home that same day (Friday), woke the next morning to pack up our Spokane apartment (Saturday), then hauled everything across state on Sunday.

My wonderful WONDERFUL parents helped us the whole way with packing, hauling, and unpacking, as well as a few of Kevins family meeting us at our new place to unpack.  I left Kevin in Puyallup to start work the next day, and drove back with my parents to Spokane to finish one more week of work in the Spokane/Coeur dAlene offices.  The week was spent working and cleaning the old apartment, along with seeing my adorable nephews who were visiting my parents that weekend.

That Thursday came and I was off to Puyallup to join Kevin and help him finish unpacking everything.  I quite literally told him: "Dont you touch my kitchen!  I get to decide where everything goes!"  Since moving, we have settled into our new place and new jobs.  We have had a wonderful time exploring the new area we live in.

Here are some of our adventures: 

The first weekend we were here, we went on an overnight camping trip near the south end of Mt. Rainier, which is only an hour drive away.  We went on a beautiful (but challenging) hike to see some waterfalls.  This was Kevin and my first time camping together, and I have a feeling it will become a fun summertime hobby for us in the future.







The next weekend we went to the Point Defiance Zoo in Tacoma.  From there we headed to Sequim to stay with Kevins family and hike Storm King, which was even harder than the previous weekends hike!  At the top we had a wonderful view of Lake Crescent!



We went hiking again the next weekend, this time to Mt. St. Helens with Kevins parents, which was a 2.5 hour drive from where we live.  During the weekend, we got to explore some of Mt. St. Helens lava caves and canyons.  We felt quite adventurous indeed!





Another weekend we went to a Mariners game in Seattle.  We were able to take the light rail from Tukwila to downtown Seattle, which was lots of fun.  Unfortunately, they lost that evening, but we did get to enjoy some fireworks set to Seattle Music, which was spectacular.


This last weekend, my parents visited on Friday night.  We had a delicious dinner at home of curried pumpkin soup and Indian spiced sauteed veggies (recipe to come), and went to the Puyallup Farmers Market in the morning.  After they headed to the rest of their trip in Vancouver, Canada, we met some friends in Auburn for a mini beer festival called Hops and Crops.

I am so delighted to be busy with so many fun things, but I have to keep diligent on making healthy homemade meals.  Tomorrow I will be sharing with you a recipe I have already made twice this last week: Indian-Spiced Sauteed Veggies!

Trip to Vancouver BC for Kevins Birthday

Hi all!  I mentioned in a post earlier this week that Kevin and I had gone on a long weekend trip to Vancouver, BC for his 25th birthday.  Because of the time of year, Kevins birthday is often overshadowed by Christmas and New Years, so I always put in extra effort to make his birthday fun and exciting.  Since this is his first birthday since moving across the state where we would usually celebrate by going out on the town with friends, I decided a little surprise trip somewhere we hadnt been together would be fun.

I had everything planned down to a T with the hotel, activities, restaurants to try, and it was a very fun trip besides a few negatives (a.k.a. how crazy traffic is in Vancouver and the fact that our car battery was dead after sitting in a garage for 3 days.  Thank goodness for AAA!).  I wont bore you with all of the gory details of the trip, but here are a few pictures of our adventure.

New Job and Recipes to Come

Hello my lovely readers!  Im so sorry that I have been a bit absent this week. This is week three at my new job and I am just starting to settle in from all of the excitement and newness of it. As a result, Ive been fairly mentally tried when I get home, so I have shied away from anything too complicated or innovative in the kitchen.

On Wednesday, Kevin and I had a fun evening with my parents when I made them a new dish I have been loving, but is not quite blog ready (at least picture-wise). All I will tell you is that it is an Indian dish with lots of greens and a spicy punch Mmm!  I also tried my hand at making homemade tahini. After lightly roasting the sesame seeds and blending them to heck in my food processor (unfortunately with a little bit of oil to help it along), I ended up with the perfect consistency of store bought tahini. The taste was not quite what I was hoping for though. I think I toasted the seeds for a little too long because the final tahini had a bit too much of a browned taste to it. I decided I could do better next time I tried by not roasting it for nearly as long and be able to make it without any oil. I will let you know how my next batch goes.

I am so determined to make homemade tahini, (1) because store bought is way too expensive, (2) I want to see exactly what goes into it (no salt or preservatives), and (3) a reader of mine requested that I recreate and nutritarian-ize Trader Joes Goddess Dressing that she enjoys. I got a bottle of this dressing last week to have a comparable and to be able to look at the ingredients list.  Tahini is the main ingredient for this dressing, but it also has quite a zing to it. Im planning on giving its recreation a shot this weekend and hope to have the recipe ready for a post next week.

Day 85 of Meta and the sunrise to remember

Today is day 85. I feel like dragging it all. I really do. Because I dont want Meta to finish. And no, I am not doing it on purpose, it happens, but I do have the feeling that I want to stop time for a while and hang in there - in that last level. Is it because I am not completely satisfied with the results? I might have been eating a bit too much, I cant check my weight as there are no scales. I have been having problems sticking to the workouts every day, because there is always so so so much to do.

But anyway. Enough of self pity :) The good news - I did day 85 today! 5 more days folks! Just 5 more days! It has been a great wonderful time! Today I did the workout in the evening, but it is still kicking my ass. Some of the MS exercises I can repeat after Tracy, some I really have to stop every 5-10 reps and rest for some seconds. It is tough!!!

But today was a great day. It actually felt too long and may be even as if it were two days. In the morning (well, at night) we woke up at 3:30 and went to see the sunrise on top of the mountain. Well guess what? If it is 15 degrees C here during the day, it was 0 up on the top. But boy was it so worth it!!! We went with 3 (!!!) ski lifts to the very top (where the skiers are even not normally allowed) of Mont Fort. We even saw the Mont Blanc - the highest peak in Western Europe (we dont count the Russian Elbrus, which is higher hohoho... :D) But all in all, guys, judge for yourself - it was even more beautiful in real life!!!

Most of these pictures - simply no comments... We were too frozen to really appreciate it all right there. But after doing this great trip, having these pictures.... We definitely will remember this for a lifetime. 

Do you know what it is like to go from about 15 degrees to 0? This is what it is like... And a hoody doesnt help! There was snow! In the middle of July. Boy was I freezing!

All in all, great day! We had a small breakfast after the sunrise and crashed for a nap. Then Liuba did a lot of "window-shopping" online, tried to work and workout. Well, the day was good anyway. :)
