Whole Grain Waffles for Easter Sunday

Today I am excited to share with you a recipe from my mom.  I have mentioned several times before that my parents also follow a Nutritarian lifestyle, so I am lucky enough to be able to go home and have it be a safe haven of eating!

Since becoming a Nutritarian in the summer of 2011, my mom has found a handful of recipes that are her regular go-to meals, including teriyaki chickpea and pineapple rice, Thai veggie pizza, black bean and veggie fajitas, lentil soup, black bean burgers, and Kittys Asian Slaw.  Recently she has added a waffle recipe that she created, into her rotation.  I couldnt think of anything more delicious and filling to have for Easter brunch than her Whole Grain Waffles topped with peanut butter and organic maple syrup, with some orange slices on the side.

Whole Grain Waffles for Easter Sunday

Time: 20 minutes
Servings:  2-4

Ingredients:
        1 flax egg (1 Tbsp flaxseed meal & 2.5 Tbsp water)
        1 Tbsp molasses
        1 ripe banana
        6 dates (or about 1/4 cup)
        1/2 Tbsp baking powder
        1 cup plant-based milk (more to thin)
        1 cup whole wheat flour
        1/4 cup ground old fashioned oats
Instructions:
  1. Preheat waffle iron while you prepare the batter.
  2. Stir together the flaxseed meal and water, and set aside.
  3. In a high speed blender, blend the plant milk, molasses, banana, and dates until smooth and creamy.
  4. Mix your dry ingredients in a medium-sized bowl.  Mix in blended banana mixture and flaxseed.
  5. Stir well to combine, adding more plant milk to thin to the correct consistency.
  6. Coat your waffle iron with non-stick spray and pour the batter in.  Cook until as crispy as you like it.
  7.  Serve with fresh fruit, nut butter, or your favorite syrup.
Kittys Notes:
As you are cooking a batch of this, the batter tends to thicken up, so thin with more almond milk if it becomes too thick.  We like to have our waffles with natural peanut butter and organic maple syrup.  It would also be delicious to have some blended fresh berries or mashed banana on top if you are trying to watch your added sugar intake.  We have never tried making this recipe as a pancake, but the batter should be able to cook in a similar way.   If you try this, please let us know how it went in the comment section!

Spicy Buffalo Wing Hummus for Superbowl Sunday!

Go Hawks!

Some of you may know from previous blog posts that I live in Spokane, Washington... so naturally, I have been a Seahawks fan my whole life.  All season long Kevin and I, along with all of our friends who are also Seahawk fans, have watched them march to victory.  And now, with only two days left until the Superbowl, we cant wait for the best victory of all!!!

In the meantime, the Inland Northwest has gotten a bit of snow.  The driving hasnt been too bad (not Alabama bad), but the key is just to go slow, have the right tires, and to stay away from cars as if everyone is out to get you.  It has worked so far for me!

Last night we went to the gym and Kevin did weight training and cycling while I went to a yoga class.  I am always so relaxed afterwards, but also thoroughly sweaty from the hot temperature and challenging moves.  Tonight, after Kevin is finished with one of his last exams before becoming a Certified Secondary Education Teacher in Washington, were planning on going to the gym to workout.  Im planning on working in the workout below into our session.


We are planning on spending our Superbowl at a bar just down the street from our apartment.  We were lucky enough to win a raffle for a $20 gift card and pick of tables for the Superbowl the last time we went for the playoff game.  Before heading to the bar for the game, we are planning on having everyone over for some pre-game snackies and beer (so our gameday tab doesnt end up being too horrible).  For the party I will be making one of my favorite dips: Spicy Buffalo Wing Hummus!

Spicy Buffalo Wing Hummus

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 1/4 cup Franks RedHot Buffalo Wing Sauce (more to taste)
  • 3 Tbsp tahini (sesame seed paste)
  • 2 Tbsp bean liquid
  • 1 1/2 Tbsp fresh squeezed lemon juice
  • 2 tsp minced garlic
  • 1/2 tsp liquid smoke
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp onion powder
  • 1/4 tsp cayenne pepper *Optional*

Instructions:

  1. Place all ingredients into a food processor.  Blend until smooth and creamy, adding more Wing Sauce and/or cayenne pepper to reach the desired spiciness.
  2. Scoop the hummus into your desired serving or storage dish and sprinkle with some extra cayenne pepper (or paprika if you are not a fan of the heat... that the Seattle D will be bringing on Sunday!).
  3. Serve immediately or chill until game-time!  Serve with whole wheat pita slices and veggies to dip. 

Amys Notes:

I LOVE this hummus with celery sticks.  My husband loves to eat spicy chicken wings, so when we go out and he has those, I often order a side of wing sauce with a bunch of celery to enjoy.  Celery seems to always accompany wings, and it makes the perfect flavor combo here.  I find that celery has a way of cooling down the heat in a sauce or dip, while still allowing you to enjoy all of the flavors.

Super Bowl Sunday!

Happy Super Bowl Sunday to everyone!  As you can see from my last post, I am a Seahawks fan and am hoping for the correct outcome today.  Our plans for the Super Bowl include having food and drinks at our apartment with a dozen or so friends before heading to a bar down the way where we have reserved the best two tables in the house.  Im happy to save a bit of money by eating and drinking a bit beforehand, but even more happy that I will have minimum cleanup after the game.  We will be recording the game at home anyways because we assume that we will have a hard time hearing all of the funny commercials to come.
